I have been seeing many higher end sound projectors on ebay that claim they can replay stereo tracks, (2-tracks). Did there use to be stereo sound film available? How did this work?

Sound film had both a main track and a balance stripe. Some projectors would let you record sound on the balance stripe. The fidelity wasn't as good as the main stripe but it was tremendously practical as you could "bounce" tracks back an forth, adding other sounds while doing so. Some projectors let you access both tracks independently on playback so you could have true stereo separation.
Ahhhh. The salad years of super 8.....

I have the Elmo GS1200 and make my sound tracks in stereo. It sounds astonishing good. Shure, a sound engeneer could measure that the balance track has a smaller dynamic range than the main track, but for shure, you cannot hear it.
Stereo sound film is available today without any problems. Maybe home made with a stereo striping machine (f.e. Weberling DS240) or you order "main and balance stripe" in the lab.
Other projectors with Stereo capability are the Beaulieu, the Bauer T610, T600, T60, the Chinon SS 1200, I think the Eumig S930 and for shure some other models, too.

I have Sankyo stereo 800 and I once tested to record music only to the balance stripe...It didn't sound so bad.
